Tandoori roast cauliflower with rice

Try this quick and tasty Indian-inspired meat-free dish for your Meatless Monday dinner! Ready in 30 minutes.
Ingredients:
  • 100g tandoori paste
  • 280g yoghurt
  • 1 cauliflower, cut into florets
  • 30.00 ml currants
  • 1 red onion, thinly sliced crossways
  • 1 lemon, juiced
  • 250g pkt 7 Ancient Grains microwavable rice
Instructions:
  • Preheat the oven to 250°C. Mix tandoori paste and half of the yoghurt in a large bowl. Add cauliflower and stir well. Transfer the mixture to a baking dish, sprinkle with currants, drizzle with 1 tbs of water. Cover with foil and bake for 10 mins. Remove foil and bake for an additional 15 mins until cauliflower is lightly charred and tender.
  • Mix together the onion and lemon juice in a bowl while you cook the rice according to the package instructions.
  • Spread the rice on a big platter. Top it with the cauliflower mix and sprinkle the onion mix on top. Mix the leftover yogurt with 1½ tablespoons of water in a bowl and drizzle it over the cauliflower mix before serving.
