Indian-spiced chicken thigh skewers: Ready in 15 minutes in the oven, with perfect char under the broiler.
Ingredients:
  • 2 (6 ounce) containers peach-mango yogurt
  • 3 tablespoons garam masala
  • 1 lemon, zested and juiced
  • 1 (1 inch) piece fresh ginger, grated
  • 1 teaspoon curry powder
  • 2.5 pounds skinless, boneless chicken thighs
Instructions:
  • Mix yogurt, garam masala, fresh lemon juice, lemon zest, grated ginger, and curry powder in a large resealable bag.
  • Cut each chicken thigh into thin strips, then place them in the marinade-filled bag. Refrigerate for 30-60 minutes.
  • Preheat the oven to 400°F (200°C) and place an oven rack in the center. Line a sheet pan with aluminum foil.
  • Skewer chicken thigh pieces on six 15-inch metal skewers and lay them across the sheet pan, ensuring they rest on the edges of the pan.
  • Roast skewers in the oven until golden brown, about 15 minutes. Take them out of the oven.
  • Position an oven rack 6 inches below the broiler and preheat the broiler. Broil the chicken skewers for 3 minutes until lightly charred, keeping a close eye on them.
