Family date cake with chopped walnuts - a delectable treat!
Ingredients:
  • 8 ounces dates, pitted
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 cup chopped walnuts
  • 1 cup butter
  • 1 cup white sugar
  • 3 eggs, beaten
  • 0.75 cup hot water, or as needed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease and flour an 8-inch round springform pan.
  • Boil dates in water until softened, about 5 minutes. Drain and blend in a food processor until smooth.
  • In a large bowl, combine the flour and baking soda by sifting them together. Mix in the chopped walnuts until evenly incorporated. Set aside.
  • In a large bowl, use an electric mixer to beat the butter and sugar until light and fluffy. Gradually add the beaten eggs, mixing well. Fold in the ground dates until combined. Gently stir in the flour mixture until just incorporated. Adjust the batter consistency by adding 3/4 cup hot water as needed. Pour the batter into the prepared pan.
  • Bake the cake in the preheated oven for 45 to 50 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
