Louisiana Southern fried chicken with a moist and flavorful herbed batter using evaporated milk.
Ingredients:
  • 1 (3 pound) whole chicken, cut into 6 pieces
  • 2 eggs, beaten
  • 1 (12 fluid ounce) can evaporated milk
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2.5 cups all-purpose flour
  • 1.5 cups vegetable oil for frying
Instructions:
  • Combine eggs, milk, most of the salt, pepper, garlic powder, and onion powder in a medium bowl, leaving a little of each for seasoning the chicken later. Set mixture aside.
  • Season both sides of the chicken pieces with a final touch of salt, pepper, garlic powder, and onion powder.
  • Heat oil in a large skillet over medium heat. Place flour in a plastic bag. Dip chicken pieces one at a time into the egg/milk mixture, then transfer to the bag. Seal the bag and shake to coat chicken evenly with flour.
  • To test oil temperature, sprinkle a bit of flour in the skillet - if it fries, it's ready! Add chicken pieces to the skillet and cook for 5 minutes. Flip the chicken and continue frying for about 15 minutes until fully cooked and juices run clear.
