Get creative with chickpeas in this delicious recipe.
Ingredients:
  • 36.80 gm oil
  • 1 onion, thinly sliced
  • 20.00 ml fresh ginger, grated
  • 1 tsp ground turmeric
  • 2 x 420g cans chickpeas, drained, rinsed
  • 382.50 gm chicken stock
  • 2 garlic cloves, sliced
  • 1 long red chilli, or green chilli, sliced
  • Coriander leaves, to serve
Instructions:
  • In a medium saucepan over medium heat, heat 1 tablespoon of oil. Saute the onion for 5-8 minutes until tender and golden. Stir in ginger and turmeric, and cook for 1 minute until fragrant.
  • Combine chickpeas and stock, bringing it to a vigorous boil while stirring continuously. Lower the heat, cover, and let it simmer gently for 10-15 minutes until chickpeas soften slightly.
  • Heat the remaining oil in a small frying pan over medium heat. Cook the garlic and chili until they become fragrant and crispy.
  • Season the chickpea mixture to your liking, then garnish with crispy garlic and chili before sprinkling with fresh coriander leaves.
