Tarragon & artichoke chicken

Elevate your dinner with gourmet tarragon and artichoke chicken.
Ingredients:
  • 12 chicken thigh cutlets
  • 1 brown onion, cut into wedges
  • 40.00 ml plain flour
  • 1 chicken style stock cube
  • 375ml (1 1/2 cups) water
  • 40.00 ml white wine vinegar
  • 1 tsp dried tarragon
  • 60ml (1/4 cup) pouring cream
  • 1 x 280g btl artichokes in brine, rinsed, drained
Instructions:
  • Preheat the oven to 180°C. In a large flameproof casserole dish, heat half of the oil over medium-high heat. Cook half of the chicken for 3 minutes on each side until golden brown. Place the cooked chicken on a plate and repeat with the remaining chicken.
  • In the same dish, heat the rest of the oil. Sauté the onion for 2-3 minutes until soft. Stir in the flour and cook for 1 minute. Add the stock cube and water, whisk until thickened. Mix in the chicken, vinegar, and tarragon. Bake for 30 minutes until the chicken is tender.
  • Heat the dish over medium heat, then combine the cream and artichokes. Stir and cook for 5 minutes until the artichokes are warmed. Finally, taste and season with salt and pepper.
