Nantucket Island specialty cake passed down from my grandmother. Upgrade with homemade vanilla icing for extra yum. Perfect with a cold glass of milk.
Ingredients:
  • 2 eggs, beaten
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 pinch salt
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 cup milk, warmed
  • 1.5 tablespoons butter, melted
  • 1 (16 ounce) container prepared vanilla frosting
  • 2 (1 ounce) squares bittersweet chocolate, melted
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 9x13 inch baking pan by greasing and flouring it.
  • Combine eggs, sugar, flour, salt, baking powder, and vanilla in a large bowl. Mix in warm milk and butter until smooth. Pour into pan and spread evenly.
  • Bake in the preheated oven for 35 to 40 minutes or until a toothpick inserted into the center comes out clean. Allow cake to cool completely before frosting.
  • Cover the cake with a layer of vanilla frosting, then generously drizzle with bittersweet chocolate. Allow the chocolate to cool and set before enjoying this decadent treat.
