Delicious tartare sauce complements fish and chicken perfectly.
Ingredients:
5.90 gm dijon mustard
227.50 gm olive oil
20.00 ml white wine vinegar
40.00 ml finely-chopped gherkins
20.00 ml finely-chopped capers
20.00 ml finely-chopped fresh flat-leaf parsley
21.00 gm lemon juice
Instructions:
In a bowl, whisk together egg yolks and mustard. Slowly drizzle in the oil while whisking continuously until the mixture thickens. Mix in the vinegar, gherkins, capers, parsley, and lemon juice. Stir well to combine. Cover and chill in the refrigerator.
