Tastira (Tunisian Fried Peppers and Eggs)

Flavorful Tunisian side dish pairs perfectly with crispy fish.
Ingredients:
4clovesgarlic, diced
1tablespooncaraway seeds
1pinchsalt
3tablespoons olive oil
0.66666668653488 cupmild chile peppers, chopped
1.5 cups green bell peppers, seeded and chopped
2cups tomatoes, seeded and chopped
4eggs
Instructions:
Combine the garlic, caraway seeds, and a pinch of salt, then crush them using a mortar and pestle or the side of a mixing bowl.
In a skillet over medium heat, sauté chile peppers in 1 tablespoon of olive oil until softened, for about 5 minutes. Remove and set aside. Add another tablespoon of oil to the skillet and cook bell peppers and tomatoes until soft, for about 5 minutes. Combine with the chile peppers. Stir in mashed garlic and caraway seeds. Serve the flavorful vegetable mixture on plates or a platter.
Heat the remaining oil in the skillet until shimmering. Fry the eggs until the whites are cooked through to your liking, about 2-3 minutes for runny yolks and 4-5 minutes for fully cooked yolks. Place the fried eggs on the vegetable mixture and season generously with salt and pepper.
