Tatsoi salad with sesame dressing

Tangy tatsoi, also known as spinach mustard, shines in this vibrant side salad for a nutritious twist.
Ingredients:
  • 48.00 gm tahini (see notes)
  • 15.90 gm light soy sauce
  • 1 garlic clove, finely chopped
  • 21.00 gm lemon juice
  • 60ml peanut oil
  • 2 spring onions
  • 1/3 telegraph cucumber, peeled, cut in half, seeded
  • 1 bunch tatsoi, trimmed
  • 200g frozen edamame, thawed, shelled (see notes)
  • 3.00 gm white sesame seeds
Instructions:
  • In a small bowl, blend tahini, soy sauce, garlic, and lemon juice. Incorporate peanut oil until well combined. If needed, add a splash of water for desired consistency. Season with salt and freshly ground white pepper to taste. Set aside.
  • Remove the green part of the spring onion and slice the white bulb lengthways. Slice the cucumber widthways. Place tatsoi on a platter and top with spring onion, cucumber, edamame, and sesame seeds. Serve with sesame dressing.
