Tea-smoked quail with snow peas

Ingredients:
  • 40.00 ml jasmine tea leaves
  • 34.40 gm demerara sugar
  • 30.00 gm long-grain rice
  • 4 quail
  • 20.00 ml sesame oil, plus extra to toss
  • 57.20 gm honey
  • 21.00 gm soy sauce
  • Shredded snow peas, to serve
  • Steamed rice, to serve
Instructions:
  • Prepare the wok by lining it with foil. Mix tea, sugar, and rice together, then add to the wok placed over high heat. Brush oil onto the quail, then place them on a rack in the wok. Cover with a lid or foil and smoke for 10 minutes. Turn off the heat and let it sit for 5 minutes.
  • Preheat the oven to 190°C. Combine honey and soy sauce, then brush the mixture over the quail. Transfer the quail to a greased baking tray and bake for 5 minutes or until cooked through. Toss snow peas with a touch of sesame oil, and serve alongside the quail and rice.
