Indulge in creamy Southern pecan candy for a festive holiday treat.
Ingredients:
  • 1 teaspoon almond extract
  • 2 teaspoons butter, or as needed
  • 2 (12 fluid ounce) cans evaporated milk
  • 1.5 cups white sugar
  • 2 cups pecans
Instructions:
  • Butter the 9x13-inch pan with 2 teaspoons of butter to ensure the recipe doesn't stick.
  • In a large heavy stockpot, mix evaporated milk and sugar over medium heat. Stir continuously until boiling. Cook the syrup, stirring occasionally, until it reaches 235°F (110°C) on a candy thermometer or forms a soft ball in cold water in about 5 to 8 minutes.
  • Combine pecans and butter with the syrup, cooking until candy crystals start forming on the pot's side, approximately 30 minutes. Remove from heat, then mix in vanilla and almond extracts.
  • Pour the sweet, gooey candy into the prepared dish and allow it to cool for 10 minutes before slicing it into delectable squares.
