Indulge in creamy Southern pecan candy for a festive holiday treat.
Ingredients:
1teaspoonalmond extract
2teaspoons butter, or as needed
2 (12 fluid ounce) cans evaporated milk
1.5 cups white sugar
2cups pecans
Instructions:
Butter the 9x13-inch pan with 2 teaspoons of butter to ensure the recipe doesn't stick.
In a large heavy stockpot, mix evaporated milk and sugar over medium heat. Stir continuously until boiling. Cook the syrup, stirring occasionally, until it reaches 235°F (110°C) on a candy thermometer or forms a soft ball in cold water in about 5 to 8 minutes.
Combine pecans and butter with the syrup, cooking until candy crystals start forming on the pot's side, approximately 30 minutes. Remove from heat, then mix in vanilla and almond extracts.
Pour the sweet, gooey candy into the prepared dish and allow it to cool for 10 minutes before slicing it into delectable squares.
