Indonesian dish with deep-fried hard-boiled eggs simmered in spicy sauce with red chile peppers, tomatoes, garlic, and shrimp paste.
Ingredients:
1cupvegetable oilfor frying
6hard-boiled eggs, shells removed
6red chile peppers, seeded and chopped
4clovesgarlic
4 medium shallots
2tomatoes, quartered
1teaspoonshrimp paste
1.5 tablespoons peanut oil
1teaspoonwhite vinegar
1teaspoonwhite sugar
salt and pepper to taste
Instructions:
In a small saucepan over medium-high heat, gently cook the eggs in 1 cup of hot oil until they turn a beautiful golden brown, about 5 to 7 minutes. Set aside once done.
In a food processor, pulse the chile peppers, garlic, shallots, tomatoes, and shrimp paste into a smooth paste. Gradually pour in the peanut oil and continue blending until smooth.
In a large skillet over medium heat, warm 1 tablespoon of oil. Add the chile pepper mixture and stir in vinegar, sugar, salt, and pepper. Gently place the fried eggs in the skillet, ensuring they are coated. Simmer on medium-low heat for about 5 minutes until fragrant.
