Delectable Puerto Rican coconut pudding with a wobbly, jelly-like texture.
Ingredients:
  • 2 (13.5 ounce) cans coconut milk
  • 2.25 cups white sugar
  • 1.5 teaspoons vanilla extract
  • 0.5 teaspoon salt
  • 1 cup cornstarch
  • 0.75 cup water
  • 1 pinch ground cinnamon
Instructions:
  • In a saucepan, mix coconut milk, sugar, vanilla extract, and salt. Bring to a boil and simmer for 6 minutes, stirring occasionally.
  • In a bowl, mix cornstarch and water until smooth.
  • Whisk cornstarch-water mixture in the saucepan until it thickens into a pudding consistency, about 2 minutes. Strain the mixture into a bowl after removing from heat.
  • Transfer the strained mixture to a mold, pan, or individual serving glasses. Smooth the surface and let it cool for 15 minutes. Chill in the refrigerator for a minimum of 2 hours. Dust with ground cinnamon before serving.
