Tequila sunrise martini mousse recipe

Experience a modern twist on a classic vintage cocktail with this luscious orange jelly and mousse.
Ingredients:
  • 2 x 85g packet orange jelly crystals
  • 250ml (1 cup) boiling water, plus 200ml, extra
  • 375ml (1 1/2 cups) thickened cream
  • 50ml tequila
  • Thinly sliced orange, to serve
  • Maraschino cherries, to decorate
Instructions:
  • First, empty one packet of jelly crystals into a heatproof bowl. Pour over the boiling water and stir until completely dissolved. Let it sit for about 10 minutes or until slightly cooled. Then, transfer the mixture to the fridge and stir occasionally for 15-20 minutes until it thickens into a syrupy texture.
  • In a large bowl, use electric beaters to whip the cream until soft peaks form. Slowly incorporate the cooled jelly mixture until stiff peaks form. Divide the mousse among 6 martini glasses and chill in the fridge for 30 minutes to set.
  • Place the leftover jelly crystals in a heatproof bowl and pour in the extra boiling water. Stir until dissolved. Mix in the tequila and stir well. Let it sit for 10 minutes to cool slightly, stirring occasionally. Chill in the fridge, stirring every so often, until thick and syrupy (about 15-20 minutes). Carefully pour the mixture into glasses and refrigerate for 4 hours until set.
  • Skewer orange rind strips and cherries, then place them on top of each mousse before serving.
