Thai beef salad

Flavorful Thai beef salad - quick and easy!
Ingredients:
  • 600g beef rump strips
  • 36.80 gm vegetable oil
  • 1 tsp minced garlic
  • 20.00 ml lemongrass paste
  • Juice of 2 limes
  • 100ml sweet chilli sauce
  • 60ml (1/4 cup) fish sauce
  • 150g mixed leaf salad
  • 1 carrot, peeled, grated
  • Coriander sprigs, to serve
Instructions:
  • Season beef generously with salt and pepper. Heat half of the oil in a wok until sizzling, then add half of the garlic and lemongrass followed by half of the beef. Cook for 3 to 4 minutes until browned and tender. Transfer to a plate. Repeat with remaining oil, garlic, lemongrass, and beef.
  • Whisk together lime juice, sweet chilli sauce, fish sauce, and sugar in a bowl to create the dressing.
  • In a separate large bowl, combine mixed lettuce, carrots, and cilantro. Add half of the dressing to the beef in the wok, then drizzle the remaining dressing over the salad and toss to combine.
  • To present, evenly distribute the salad onto plates and crown with the beef.
