Marinated chicken and crisp veggies wrapped in spring roll wrappers, served with Thai-style peanut sauce. Ideal for appetizer or light meal.
Ingredients:
  • 1.5 cups peanut sauce, divided
  • 1 (1 1/2 inch) piece fresh ginger root, minced
  • 2 cloves garlic, minced
  • 2 teaspoons soy sauce, divided
  • 1 pound skinless, boneless chicken breast halves - cut into 1 inch pieces
  • 2 teaspoons peanut oil, divided
  • 12 ounces bean sprouts
  • 6 ounces fresh snow pea pods
  • 4 green onions, chopped
  • 1 pound watercress, chopped
  • 0.25 cup chopped fresh cilantro
  • 2 large carrots, peeled
  • 12 spring roll wrappers
Instructions:
  • In a bowl, mix together 1 cup of peanut sauce, ginger, garlic, and 1 teaspoon of soy sauce. Add chicken and toss until well coated. Refrigerate covered for 30 minutes.
  • In a wok over medium heat, warm 1 teaspoon of peanut oil. Add bean sprouts, snow peas, and green onions. Stir-fry until heated through but still crunchy, about 3 to 4 minutes. Take off the heat.
  • Combine the bean sprout mixture with watercress and cilantro in a large bowl. Peel the carrot into long strips using a vegetable peeler, and add them to the bowl. Finally, pour in the remaining teaspoon of soy sauce and toss everything together until well coated.
  • Warm up the last teaspoon of peanut oil in the wok over medium heat. Cook the marinated chicken, stirring occasionally, until it's no longer pink in the center and the juices run clear, around 10 minutes.
  • Fill a large bowl with hot water. Soak one wrapper until soft and pliable, for about 2 seconds. Remove wrapper, let excess water drain, and lay it on a work surface. Add two generous spoonfuls of chicken and a small handful of vegetable mixture in the middle of the wrapper. Fold the sides in, then fold the bottom up and over the filling before rolling to seal. Repeat to create more spring rolls.
  • Drizzle with the remaining 1/2 cup of peanut sauce for a perfect dipping experience.
