Quick and tasty Thai noodles ready in 25 minutes.
Ingredients:
  • 152.50 gm oyster sauce
  • 42.00 gm soy sauce
  • 40.00 ml rice wine vinegar
  • 48.80 gm fish sauce
  • 32.00 gm brown sugar
  • 3 garlic cloves, crushed
  • 440g packet rice stick noodles
  • 36.40 gm peanut oil
  • 500g chicken thigh fillets, thinly sliced
  • 1 red capsicum, thinly sliced
  • 1 long red chilli, thinly sliced
  • 400g can baby corn spears, drained, halved diagonally
  • 2 green onions, thinly sliced diagonally
  • 125.00 ml fresh Thai basil leaves
  • 82.50 ml fresh coriander leaves
Instructions:
  • Mix together the oyster sauce, soy sauce, vinegar, fish sauce, sugar, and garlic in a small bowl. Place the noodles in a large heatproof bowl, cover them with boiling water, and let them sit for 2 minutes. Drain the noodles well.
  • In a wok over high heat, heat half of the oil. Add chicken and stir-fry for 4 to 5 minutes until lightly browned. Transfer to a bowl.
  • In a hot pan, sizzle the capsicum and chili in the remaining oil. Stir and cook for 2 minutes. Toss in the drained noodles, chicken, corn, and onion. Stir-fry for another 2 minutes until everything is warm. Add the oyster sauce mixture and half of the basil. Keep stirring for 2 more minutes until everything is well mixed. Plate and garnish with coriander and the remaining basil before serving.
