Thai green chicken curry

Tender chicken drumsticks soaked in zesty green curry sauce with a hint of sweetness, served over fluffy rice.
Ingredients:
  • 175.00 gm green curry paste
  • 400ml can coconut milk
  • 255.00 gm chicken stock
  • 230g can sliced bamboo shoots, drained
  • 24.40 gm fish sauce
  • 21.00 gm lime juice
  • 8.00 gm brown sugar
  • 250.00 ml bean sprouts
  • 12 chicken drumsticks
  • 1 onion halved, sliced
  • Mint leaves, to serve
  • Steamed jasmine rice, to serve
Instructions:
  • In a spacious pan or wok, heat the oil until shimmering. Brown the drumsticks in 3 batches until crispy; then transfer to a plate. Sauté the onion over high heat for 2 minutes until tender. Mix in the green curry paste and cook, stirring, for 1 minute.
  • Pour the coconut milk and stock into the pan with the drumsticks. Bring to a boil, then simmer uncovered for 30 minutes until the chicken is fully cooked.
  • Combine bamboo shoots, fish sauce, lime juice, and brown sugar into the curry. Garnish the dish with bean sprouts, mint, and coriander. Serve accompanied by rice.
