Tender chicken cooked in Thai green curry with coconut milk, ginger, and green onions for a flavorful dinner.
Ingredients:
  • 1 tablespoon dark soy sauce
  • 1 tablespoon all-purpose flour
  • 1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 2 tablespoons cooking oil
  • 2 tablespoons green curry paste
  • 2 green onions with tops, chopped
  • 3 cloves garlic, peeled and chopped
  • 1 teaspoon fresh ginger, peeled and finely chopped
  • 2 cups coconut milk
  • 2 tablespoons white sugar
  • 1 tablespoon fish sauce
  • 0.5 cup cilantro leaves, for garnish
Instructions:
  • First, drizzle 1 tablespoon of soy sauce into a shallow dish. Next, add 1 tablespoon of flour into another separate shallow dish. Now, coat chicken pieces in soy sauce first, then in flour, ensuring they are evenly coated.
  • In a large skillet over medium-high heat, sizzle the chicken in hot oil, stirring often, until golden brown, approximately 5 minutes. Then, move the chicken to a plate and set aside.
  • Lower the heat to medium and incorporate the curry paste. Let it cook for 1 minute until it releases its aroma. Introduce green onions, garlic, and ginger; continue cooking for another 2 minutes.
  • Place the chicken back in the skillet, mixing well to ensure it's coated with the flavorful curry paste. Add in the luscious coconut milk, sugar, fish sauce, and the remaining tablespoon of soy sauce. Allow the mixture to simmer over medium heat until the chicken is tender and fully cooked, approximately 20 minutes. To serve, garnish the fragrant curry with fresh cilantro leaves.
