Spice up dinner with bold Thai curry pork meatballs. Add more red pepper flakes for extra heat!
Ingredients:
  • 1 pound ground pork
  • 0.5 cup rolled oats
  • 1 small carrot, cut into 1-inch chunks
  • 2 tablespoons water
  • 2 teaspoons fish sauce
  • 3 cloves garlic, minced
  • 2 teaspoons lemongrass paste
  • 1 teaspoon minced fresh ginger root
  • 0.5 teaspoon crushed red pepper flakes
  • 1 egg, lightly beaten
  • 1 tablespoon coconut oil
  • 1 (14 ounce) can unsweetened coconut milk
  • 2 tablespoons green curry paste
  • 1 tablespoon brown sugar
  • 1 teaspoon fish sauce
  • salt to taste
  • 1 tablespoon lime juice
  • 0.25 cup cilantro, minced
Instructions:
  • Transfer the pork to a medium-sized bowl.
  • Use a mini food processor or blender to coarsely grind the oats for 5 to 10 seconds. Sprinkle the ground oats on top of the pork and rinse the processor.
  • In a food processor, blend carrot, water, fish sauce, garlic, lemongrass paste, ginger, salt, and red pepper flakes until smooth, about 10-15 seconds. Pour the mixture over the pork.
  • Crack the egg into the bowl and blend with the ingredients until fully mixed. Shape the meat mixture into 24 balls, each around 1 1/2 inches in size.
  • In a large skillet over medium heat, heat coconut oil until shimmering. Lightly brown meatballs on all sides for 2 to 3 minutes each. Transfer semi-cooked meatballs to a bowl.
  • Combine coconut milk, curry paste, brown sugar, and fish sauce in the skillet and bring to a simmer. Add the meatballs back in and simmer for 8 to 10 minutes until cooked through. Season with salt, stir in lime juice, and finish with a sprinkle of cilantro before serving.
