Whip up a tasty Thai green curry with prawns for a flavorful and simple dinner option.
Ingredients:
  • 9.20 gm oil
  • 56.00 gm store-bought green curry paste
  • 500ml chicken stock
  • 270ml can light coconut cream
  • 1 small red capsicum, seeds removed, chopped coarsely
  • 1 punnet baby corn, halved lengthwise
  • 45g broccoli
  • 75g snow peas, trimmed
  • 20 uncooked king prawns, heads removed, peeled with tails left intact
  • 10.60 gm lime juice
  • 40.00 ml Thai basil leaves
Instructions:
  • In a large deep non-stick frying pan over medium heat, heat oil. Add curry paste and stir fry for 1 minute. Mix in stock and coconut cream. Bring to a high simmer, then lower heat to medium-low.
  • Toss in capsicum, baby corn, and broccoli. Cook until tender, about 8-10 minutes. Stir in snow peas and prawns and cook for an additional 2-3 minutes or until prawns are done.
  • Combine the zesty lime juice and fragrant basil leaves into the dish before serving alongside fluffy rice.
