Ingredients:
  • 9.20 gm sunflower oil
  • 40.00 ml laksa paste
  • 400ml light coconut milk
  • 2 fresh makrut lime leaves*, thinly sliced
  • 500ml fish stock
  • 8 large green prawns, peeled (tails intact), deveined
  • 1 carrot, cut into thin matchsticks
  • 12 snow peas
  • Juice of 1 small lime
  • Steamed rice or cooked rice noodles (optional), to serve
Instructions:
  • 1. Heat oil in a saucepan over medium-high heat. Sauté laksa paste briefly until fragrant. Pour in coconut milk, makrut lime leaves, and stock. Simmer for 10 minutes. Introduce prawns and carrot, simmer for an additional 3 minutes. Finally, add snow peas and cook until prawns are done.
  • Enjoy while hot, drizzle with desired amount of tangy lime juice, and pair with fluffy rice or tender noodles as preferred.
