Elevate classic Chex Mix® with Thai red curry, pumpkin, and coconut for a mouthwatering flavor fusion.
Ingredients:
  • 8 cups Corn Chex™ cereal
  • 1 cup whole roasted salted cashews
  • 1 cup unsweetened large coconut flakes
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup real maple syrup
  • 3 tablespoons canned pumpkin (not pumpkin pie mix)
  • 3 tablespoons melted virgin coconut oil
  • 4 teaspoons Thai red curry paste
  • 4 cups popped popcorn
Instructions:
  • Preheat the oven to 300°F. Line 2 (15x10x1-inch) baking pans with parchment paper. Combine cereal, cashews, coconut, pumpkin pie spice, cinnamon, and salt in a large bowl.
  • Combine maple syrup, pumpkin puree, coconut oil, and red curry paste in a 2-cup glass measuring cup, whisk until well combined. Pour the mixture into the cereal and stir until evenly mixed. Spread the mixture into pans.
  • Bake for 40 minutes, stirring and rotating pans halfway through. Stir in 2 cups of popcorn into each pan. Continue baking for an extra 5 minutes. Allow to cool completely for about 30 minutes (mixture will turn crispier as it cools). Store in an airtight container.
