Easy baked chicken curry with simple sauce, onion, oven-baked delight.
Ingredients:
  • 1.5 pounds chicken thighs
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 (14 ounce) can coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons brown sugar
  • 1 small onion, chopped
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C). Generously season chicken thighs with salt and pepper and arrange them in a roasting pan.
  • Combine creamy coconut milk, aromatic curry paste, and rich brown sugar in a bowl, ensuring a harmonious blend. Drizzle this flavorful mixture over succulent chicken. Scatter onions over the chicken before sealing it all in with a layer of aluminum foil.
  • Roast in the oven until the chicken is fully cooked and tender, for about 45 minutes to 1 hour. Ensure it reaches an internal temperature of 180°F (82°C) near the bone when checked with a thermometer.
