Thai red curry sweet potato patties

Spicy red curry potato patties - perfect for a tasty portable snack!
Ingredients:
  • 500g sweet potato, peeled, chopped
  • 400g sebago potatoes, peeled, chopped
  • 400g cauliflower, cut into florets
  • 87.50 gm Thai red curry paste
  • 2 green onions, chopped
  • 40.00 ml chopped fresh coriander, plus extra sprigs to serve
  • 250.00 ml plain flour
  • 1 egg, lightly beaten
  • 187.50 ml panko breadcrumbs
  • Vegetable oil, for shallow-frying
  • Lime wedges, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • In a large saucepan, combine potato, sweet potato, and cauliflower. Add enough water to cover the vegetables. Bring to a boil and cook for 10 minutes or until vegetables are tender. Drain and transfer back to the pan. Roughly mash the vegetables and let them cool completely.
  • In a bowl, mix together vegetable mixture, curry paste, onion, coriander, flour, egg, salt, and pepper until well combined. Shape ¹⁄³ cup of mixture into a patty and coat lightly with breadcrumbs. Place on a tray and repeat with the rest of the mixture. Chill in the refrigerator for 30 minutes before cooking.
  • In a large frying pan over medium-high heat, heat oil. Cook patties in 3 batches for 4 minutes on each side until golden and cooked through. Drain on paper towel. Serve warm or cold, garnished with extra coriander, accompanied by lime wedges and sweet chilli sauce.
