Nutritious lentil salad with Thai red rice and French green lentils, perfect side for spicy entrees.
Ingredients:
  • 1 cup Thai red rice (cargo rice)
  • 1 cup French green lentils (lentilles du Puy)
  • 6 cups water, divided
  • 1 teaspoon salt, divided
  • 1 bay leaf
  • 1 cup fresh peas, hulled
  • 0.5 cup light vegetable oil
  • 0.33333334326744 cup slivered almonds
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons freshly squeezed lime juice, or more to taste
Instructions:
  • Place red rice in a refreshing water bath for 30 minutes and do the same with lentils in a separate bowl. Afterwards, drain both rice and lentils into separate pots.
  • Pour 3 cups of water and sprinkle in 1/2 teaspoon of salt into the pot of rice. Bring to a boil over medium-high heat. Cover, lower the heat, and let it simmer until the water is absorbed and the rice is tender with a slight bite, approximately 20 minutes.
  • In a pot, combine 3 cups of water, 1/2 teaspoon of salt, and a bay leaf with the lentils. Bring to a boil over medium-high heat and cook for 15 minutes. Stir in peas, lower the heat, and simmer until the liquid is absorbed and the legumes are tender but not mushy, another 5 to 10 minutes.
  • After draining the rice and lentils and discarding the bay leaf, place them in a large serving bowl to cool. Add oil, almonds, parsley, and lime juice. Gently mix everything together until well combined. Let it rest at room temperature or in the refrigerator for about 1 hour before serving.
