Delicious Thai fried rice with smoked salmon, crispy garlic, and abundant veggies - a takeout favorite revamped!
Ingredients:
  • 300g jasmine rice
  • 20.00 ml sesame oil
  • 3 Free Range Eggs, lightly whisked
  • 3 garlic cloves, thinly sliced
  • 20.00 ml finely grated ginger
  • 2 long red chillies, thinly sliced (optional)
  • 36.60 gm fish sauce
  • 40.00 ml kecap manis
  • 500g cherry tomatoes, halved
  • 2 x 150g Hot Smoked Salmon Portions Plain, flaked
  • 4 Qukes Baby Cucumbers, cut into wedges
  • 80g bean sprout
  • Spring onion curls, to serve
Instructions:
  • 1. Boil a large pot of water over medium-high heat. Add rice and cook for 12 minutes or until tender. Drain thoroughly. Spread rice on a baking tray and refrigerate for 1 hour until dry.
  • - Preheat a wok or large frying pan over high heat. Add 1 tsp of oil, swirl to coat the base, and pour in half of the beaten egg. Cook for 30 seconds until light golden and just set. Transfer the cooked egg to a work surface, roll into a log, thinly slice crosswise, and keep warm on a plate. Repeat with the remaining egg.
  • Heat the remaining oil in the wok or pan. Cook the garlic until golden and crisp, about 30 seconds. Transfer to a small bowl using a slotted spoon. Add the ginger and rice to the wok or pan, stir-fry for 3 minutes until heated through.
  • For a burst of flavor, toss in the chili (optional), fish sauce, kecap manis, and 2 tablespoons of water into the rice in the wok or pan. Stir-fry for 1 minute until everything is well mixed. Next, add the tomato and salmon and cook for 3 minutes until the tomato is tender. Finally, add the egg, mix it all together, and season to taste.
  • Evenly distribute the flavorful fried rice into serving bowls and garnish with fresh cucumber, crunchy fried garlic, crisp bean sprouts, and delightful spring onion curls over the top.
