Butter-herb roasted chicken with lemon zest, cooked to perfection in just 1 hour.
Ingredients:
  • 0.25 cup butter, softened
  • 4 cloves garlic, chopped
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 1 lemon, zested and halved
  • 1 teaspoon salt, divided
  • 1 teaspoon ground black pepper, divided
  • 1 whole chicken
  • 1 tablespoon olive oil
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Combine butter, garlic, thyme, rosemary, lemon zest, 1/2 tsp salt, and 1/2 tsp pepper in a bowl.
  • Gently lift chicken skin and spread butter mixture underneath. Press down to evenly distribute. Massage oil, remaining salt, and pepper all over chicken. Stuff lemon halves inside cavity. Place chicken in a baking pan.
  • Roast the chicken in the preheated oven, basting halfway through, until fully cooked, approximately 1 hour. Check with a meat thermometer - it should read 165 degrees F (74 degrees C) when inserted near the bone. Allow the chicken to rest for 15 minutes before carving.
