Spicy chorizo, sour cream, cheddar cheese, eggs, and hash browns come together in a creamy, delicious breakfast casserole.
Ingredients:
  • 1 pound frozen hashbrowns
  • 1 tablespoon olive oil
  • 1 pound fresh chorizo
  • 1 yellow onion, chopped
  • 12 eggs
  • 3 cups grated cheddar cheese, divided
  • 1 ½ cups sour cream, divided
  • 1 cup whole milk
  • 1 teaspoon kosher salt
  • ½ teaspoon ground pepper
  • 1 cup chopped green onions
  • 1 avocado, sliced
  • ½ cup pickled jalapeños (optional)
Instructions:
  • Prepare all ingredients.
  • Preheat the oven to 400 degrees F (200 degrees C) and generously grease a 9-by-13-inch baking dish before evenly layering hash browns across the bottom.
  • In a generous amount of olive oil, sizzle chorizo and onion in a spacious skillet on medium heat until beautifully browned, around 8 to 10 minutes. Remember to crumble the meat with a flat wooden spoon. Set aside once done.
  • Combine eggs, 2 cups of Cheddar cheese, 1 cup of sour cream, a splash of milk, a pinch of salt, and a dash of pepper in a large bowl. Gently fold in the chorizo mixture.
  • Cover the hash browns with the egg mixture in the baking dish. Spoon the remaining 1/2 cup sour cream on top of the eggs and then sprinkle the remaining 1 cup cheese over everything.
  • Bake for 35 to 45 minutes or until the center is just set. Top with green onions, avocado, and pickled jalapeños, if desired. Cut into squares and serve promptly.
