Moist Irish soda bread with oats, brown sugar, and a crispy crust - ideal for celebrating St. Patrick's Day!
Ingredients:
  • 1 tablespoon cornmeal, or as needed
  • 1.5 cups unbleached all-purpose flour
  • 1.5 cups white whole wheat flour
  • 1 cup old-fashioned rolled oats
  • 0.33333334326744 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.25 cup butter, cut into pieces
  • 1.25 cups buttermilk
  • 1 teaspoon unbleached all-purpose flour for dusting
Instructions:
  • Heat your oven to a toasty 350 degrees Fahrenheit (175 degrees Celsius), then generously sprinkle cornmeal on a baking sheet or give it a quick spray with cooking oil.
  • In a large bowl, blend together 1 1/2 cups all-purpose flour, whole wheat flour, oats, brown sugar, baking soda, and salt. Use a pastry blender or your fingers to cut the butter into the mixture until coarse crumbs form.
  • Combine buttermilk with flour using a fork until just blended. Knead 5 times in the bowl. Transfer dough onto a floured surface and knead 8 to 10 times with floured hands. Shape into a 6- to 8-inch loaf.
  • Transfer the loaf onto the baking sheet, sprinkle roughly 1 teaspoon of flour on top, and carefully score a long 'x' using a serrated knife.
  • Bake in the preheated oven for 45 to 50 minutes, until the bread is golden, sounds hollow when tapped on top, and internal temperature reaches 190°F (88°C).
