Irresistible shipwreck casserole: Tender potatoes, savory beef-tomato filling, melted cheese; perfect for family dinners.
Ingredients:
  • Nonstick cooking spray
  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 1 green bell pepper, chopped
  • 1 1/2  teaspoons ground cumin
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon freshly ground black pepper
  • 1 (28-ounce) canned diced tomatoes
  • 1 (30-ounce) package frozen hash browns, still frozen, divided
  • 4 cups grated cheddar cheese, divided
  • 2 sliced green onions, for garnish (optional)
Instructions:
  • Preheat the oven to 400°F and position the rack in the center. Grease a 9x13-inch baking dish with nonstick spray or butter.
  • In a large skillet over medium-high heat, add olive oil and ground beef. Cook, breaking it up with a spatula until browned, approximately 5 minutes.
  • Prepare the filling: Combine onion, garlic, and bell pepper in a skillet and sauté until slightly softened. Season with salt, cumin, paprika, and pepper. Stir in diced tomatoes and simmer for 15 minutes on low heat until most of the liquid evaporates, creating a sloppy joe-like filling. Remove from heat.
  • Assemble the casserole: Spread 2/3 of the frozen hash browns in an even layer in the prepared baking dish. Layer the ground beef mixture and 2 cups of grated cheese on top. Add the remaining hash browns over the cheese. Season with a pinch of salt and pepper.
  • Bake: Bake the casserole uncovered for 45 minutes, then top with remaining cheese. Return to oven until cheese melts and potatoes are crisp, about 15 minutes. Let cool briefly before serving. Garnish with sliced green onions, if desired. Store leftovers in airtight container in fridge for up to 5 days. Don't forget to rate and comment if you loved it!
