Three-Pepper Beef Tenderloin

Pepper-crusted beef tenderloin slices are bursting with flavor.
Ingredients:
  • 1 1/2-pound beef tenderloin
  • 1 tablespoon freshly ground black pepper
  • 2 teaspoons white pepper
  • 2 teaspoons fennel seed, crushed
  • 1/2 teaspoon ground thyme
  • 1/4 teaspoon ground red pepper (cayenne)
Instructions:
  • Trim excess fat from the beef. Combine the remaining ingredients and rub them over the beef. Refrigerate, covered, for at least 2 hours, but no longer than 24 hours.
  • Preheat the oven to 350°F. Grease a shallow roasting pan with cooking spray. Put the beef in the pan and insert a meat thermometer in the center of the thickest part. Roast without a cover for approximately 40 minutes, or until the thermometer shows 140°F (for medium-rare). Lightly cover the beef with foil and allow it to rest for about 15 minutes. The temperature will increase by around 5°F, and the juices will settle, making it easier to slice. Carve the beef into thin slices at a slanted angle, cutting across the grain.
