Impress a crowd with flavorful slow-cooked garlic and rosemary-infused lamb roast.
Ingredients:
  • 2.5kg Lamb Whole Leg Roast
  • 60ml olive oil
  • 2 garlic cloves, cut into small matchsticks
  • 4 thyme sprigs, cut into small sprigs
  • 2 garlic bulbs, halved crossways
  • 3 thyme sprigs, extra, to serve
  • Mashed potato, to serve
  • Steamed vegetables, to serve
Instructions:
  • Preheat your oven to 180C and generously grease a large baking dish.
  • Score lamb all over with a small knife. Massage with oil and season generously. Insert a sliver of garlic and a sprig of thyme into each cut. Transfer lamb, garlic halves, and extra thyme to a baking dish. Roast for 2 hours until medium or to desired doneness. Let rest covered for 15 minutes before serving.
  • Plate the lamb alongside a generous helping of creamy mashed potatoes and a colorful assortment of perfectly steamed vegetables.
