Tian is a delicious French veggie gratin baked in a shallow dish.
Ingredients:
  • 2 cloves garlic
  • 3/4 bunch basil
  • 90g slice crustless rustic bread
  • 60ml (1/4 cup) extra virgin olive oil
  • 40g (1/2 cup) finely grated parmesan
  • 1 x 450g (large) eggplant
  • 3 desiree potatoes
  • 2 large zucchinis
  • 3 large vine-ripened tomatoes
  • 6 sprigs thyme (optional)
Instructions:
  • 1. Cut garlic in half and add to a food processor along with washed basil leaves and torn bread chunks. Drizzle in 2 tablespoons of oil. 2. Blend until mixture forms fine crumbs. Transfer to a small bowl and mix in the parmesan cheese until combined.
  • Preheat your oven to 230C. Slice the eggplant, potatoes, zucchinis, and tomatoes into thin rounds as specified.
  • Sprinkle half of the crumb mixture over the bottom of a 20cm x 28cm ovenproof dish. Arrange the slices of eggplant, potato, zucchini, and tomato side by side and upright in the dish to form 2 rows. Sprinkle with the rest of the crumb mixture and thyme, if desired. Bake for 20 minutes or until vegetables are tender.
  • Drizzle with the remaining 1 tablespoon of oil and enjoy warm or at room temperature.
