Whole wheat almond crust with basil custard and apricot topping, perfect for picnics.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup almond meal
  • 1 teaspoon lemon zest
  • 0.75 cup butter
  • 3 tablespoons buttermilk
  • 10 egg yolks
  • 0.66666668653488 cup white sugar
  • 0.66666668653488 cup cornstarch
  • 1 quart milk
  • 3 sprigs basil
  • 0.5 teaspoon vanilla extract
  • 15 fresh apricots, pitted and sliced
  • 1 cup apricot jam
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Combine all-purpose flour, whole wheat flour, almond meal, 1 tablespoon of sugar, lemon zest, and salt in a large bowl. Use a pastry blender to cut in butter until crumbles are pea-sized. Gradually add buttermilk and mix until dough forms.
  • Evenly press the dough over the bottom and up 1/2 inch along the sides of a 12x16-inch tart pan or sheet pan.
  • Bake in the oven until lightly golden, approximately 20 minutes. Then, cool in the pan on a wire rack for about 1 hour until completely cooled.
  • Combine egg yolks, 2/3 cup sugar, and cornstarch in a heavy-bottomed pot, whisk until smooth. Stir in milk and add whole basil sprigs.
  • Heat milk mixture over medium heat, whisking constantly until steaming, around 8 minutes. Lower heat to a simmer. Use tongs to remove and discard basil sprigs. Whisk vigorously until custard thickens, for about 1 minute.
  • Place a wire mesh strainer over a large bowl and pour the custard into it. Use a rubber spatula to press the custard through the strainer into the bowl. Whisk in the vanilla extract, then cover the surface directly with plastic wrap. Refrigerate until cold, approximately 3 hours.
  • Spread the cooled custard over the crust, using a rubber spatula to ensure it reaches the edges. Top with apricot slices in an organized manner.
  • Place apricot jam in a microwave-safe bowl and heat on high for about 1 minute until melted. Drizzle the melted jam over the apricot slices.
