Create a memorable moment with these elegant and delectable jewelry box cakes.
Ingredients:
  • Blue food colouring gel
  • 340g pkt vanilla butter cake
  • 40.00 ml bought vanilla frosting
  • 250g white chocolate melts or blue candy melts
  • 150g icing sugar
  • 1 eggwhite
Instructions:
  • Preheat your oven to 180C. Grease and line the base of a 20cm round cake pan with baking paper for a perfect bake.
  • Prepare the vanilla butter cake as instructed on the packet. Pour the batter into the pan and bake for 40-45 minutes, or until a skewer inserted in the center comes out clean. Let it cool for 10 minutes after removing from the oven, then transfer to a wire rack to cool completely.
  • Trim the crusts off the cake using a serrated knife and break it into small pieces. Place the cake pieces in a food processor and pulse until fine crumbs form. Transfer the crumbs to a bowl and mix in the vanilla frosting until well combined.
  • Prepare an oven tray by lining it with baking paper. Roll the cake mixture into tablespoon-sized balls and then shape them into cubes using your fingers. Arrange the cubes on the lined tray. Cover them loosely with plastic wrap and refrigerate for 1 hour or until they are firm.
  • Melt the white chocolate melts or blue candy melts in a heatproof bowl over simmering water, stirring with a metal spoon until smooth.
  • Coat 1 lollypop stick in chocolate and insert into a cake cube. Place on the tray and continue with the remaining cake cubes.
  • Dip each cake pop into the luscious melted chocolate, ensuring it's coated all around. Tap the side of the bowl to let excess chocolate drip off. Place the cake pop in the polystyrene to let it stand tall. Repeat with the rest of the cake pops and chocolate. Leave aside for 30 minutes until the chocolate is perfectly set.
  • For the royal icing, combine the sifted icing sugar and a portion of egg whites in batches until a firm paste forms. Transfer the icing to a piping bag with a no.2 plain nozzle, and pipe it around the boxes to create a bow and ribbon. Allow the icing to set before moving on.
