Healthy and delicious spaghetti bolognaise recipe by award-nominated chef, Tillie Peter.
Ingredients:
36.40 gm olive oil
1 medium red onion, chopped
1 medium green capsicum, finely diced
1 medium carrot, finely diced
1celerystalk, finely diced
125g butternut pumpkin, peeled, grated
150g baby spinach, roughly chopped
500g lean beef mince
425g can choppedItalian plum tomatoes
15.60 gm tomato sauce
24.40 gm worcestershire sauce
22.20 gm sun-dried tomato paste (see below)
446.25 gm beef stock
123.75 gm red wine
1 tsp dried mixed herbs
1/2 tsp dried oregano
1/4 tsp cayenne pepper
1 tsp freshly crackedblack pepper
40.00 ml choppedfresh flat-leaf parsley leaves
5.00 gm raw sugar
550g spaghetti, cooked
Gratedparmesan cheese, to serve
Fresh basil leaves, to serve
270g jar sun-dried tomatoes,
3garliccloves
75.08 gm olive oil
Instructions:
Prepare the tomato paste by placing the tomatoes in a heatproof bowl and covering them with hot water. Let them sit for 2 to 3 minutes until softened, stirring occasionally. Drain the tomatoes, then blend them with garlic, oil, salt, and pepper in a food processor until smooth.
In a saucepan over low heat, gently heat oil. Add onion, capsicum, carrot, celery, pumpkin, spinach, and garlic. Stir and cook for 5 minutes until onion is soft.
Turn up the heat to medium-high and add the mince, using a wooden spoon to break it up as it cooks for 10 minutes until it's nicely browned. Stir in the tomato, sauces, tomato paste, stock, wine, mixed herbs, oregano, peppers, parsley, and sugar. Bring everything to a boil, then reduce the heat to low. Let it simmer uncovered, stirring occasionally, for 1 hour and 30 minutes until it's nicely reduced. Finally, season with salt and pepper to taste.
Portion the pasta evenly among individual serving bowls. Spoon the sauce over the pasta. Garnish with a sprinkle of Parmesan cheese and fresh basil leaves before serving.
