Indulge in a flavorful Italian chicken and spaghetti timballo bursting with pizza-inspired ingredients like pepperoni, mushrooms, olives, and gooey mozzarella.
Ingredients:
1tablespoonolive oil
1 (16 ounce) packagespaghetti
2 (24 ounce) jarsmarinara sauce
3cups cooked chicken breast meat, diced
1 large onion, diced
1 (7 ounce) package of sliced pepperoni, diced
1green pepper, diced
1 (5 ounce) canmushroom pieces, drained
1 (3 ounce) cansliced black olives, drained
3cups shreddedmozzarella cheese
1tablespoongratedParmesan cheese, or to taste
Instructions:
Preheat your oven to 350 degrees F (175 degrees C) and generously coat the bottom of a cast iron skillet or large baking dish with olive oil.
Bring a large pot of salted water to a vigorous boil. Add spaghetti and cook until al dente, about 12 minutes, stirring occasionally. Drain the pasta.
Combine spaghetti, marinara sauce, diced chicken, onion, pepperoni, green pepper, mushrooms, and black olives in a large bowl. Transfer mixture to a prepared cast iron skillet. Top with mozzarella cheese and sprinkle with Parmesan.
Bake in the hot oven until the casserole is bubbling, chicken is fully cooked, and the cheese topping is lightly browned, approximately 30 minutes.
