Titi's Cranberry Walnut Pumpkin Bread Cake

Thanksgiving-themed pumpkin cake with cranberries and walnuts.
Ingredients:
  • 2.25 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 tablespoon pumpkin pie spice
  • 1.75 cups mashed pumpkin
  • 0.5 cup vegetable oil
  • 1 cup dried cranberries
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9 1/2-inch fluted cake pan, like a Bundt® pan.
  • Combine flour, baking powder, pumpkin pie spice, and salt in a bowl, whisk until well mixed.
  • In a bowl, combine sugar, pumpkin, vegetable oil, and eggs until smooth. Gradually mix in the flour mixture until batter is smooth. Gently fold in cranberries and walnuts. Transfer the batter into a prepared cake pan.
  • Bake in the oven heated to perfection until a toothpick in the center comes out clean, approximately 35 minutes.
