Toad in the hole

Classic British dish - Toad in the Hole with rich gravy for a delicious meal.
Ingredients:
sunflower oil
8higher-welfare sausages
4sprigs of fresh rosemary
2 large red onions
2cloves of garlic
2knobs of unsalted butter
6tablespoons balsamic vinegar
1level tablespoonvegetable stock powder or 1 organic vegetable stock cube
285 ml milk
115 g plain flour
3 large free-range eggs
Instructions:
In a mixing bowl, whisk together the batter ingredients with a pinch of sea salt. Set aside. Choose a thin baking tin to maximize puffiness of the batter. Preheat the oven to 240–250ºC/475ºF/gas 9 with 2 tablespoons of sunflower oil in the tin on the middle shelf. Place a larger tray underneath to catch any oil spills. When the oil is very hot, add the sausages and cook until lightly golden. Carefully remove the tin from the oven and pour the batter over the sausages. Add a couple of rosemary sprigs to the batter. Return the tin to the oven and bake without opening for at least 20 minutes until golden and crisp. For the onion gravy, sauté onions and garlic in butter until translucent, about 5 minutes. Stir in balsamic vinegar, let it reduce by half, then add a stock cube and water. Simmer for flavorful gravy. Serve with Toad in the Hole and sides. Enjoy!
