Todd's Famous Thai Peanut Sauce

Irresistible spicy-sweet peanut sauce with roasted peanuts, chili oil, lime juice; perfect for spring rolls, grilled chicken, noodles, or dipping chips.
Ingredients:
  • 3 ounces roasted, salted peanuts
  • 1 tablespoon Asian (toasted) sesame oil
  • 1 teaspoon hot chili oil
  • 2 tablespoons soy sauce
  • 4 teaspoons fresh lime juice
  • 1 tablespoon white sugar, or to taste
  • 1 teaspoon Asian chili garlic sauce, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Spread peanuts on a baking sheet and separate whole nuts into halves. Toast until fragrant and slightly darker, about 7 to 10 minutes, being careful not to burn them.
  • Take the peanuts out of the oven and allow them to cool. Transfer them to a food processor and pulse a few times until finely chopped. Add canola oil, toasted sesame oil, hot chili oil, soy sauce, lime juice, sugar, and chili garlic sauce. Process until the mixture is a slightly textured, grainy paste.
