Todd's Famous Thai Peanut Sauce

Irresistible spicy-sweet peanut sauce with roasted peanuts, chili oil, lime juice; perfect for spring rolls, grilled chicken, noodles, or dipping chips.
Ingredients:
3ounces roasted, salted peanuts
1tablespoon Asian (toasted) sesame oil
1teaspoonhot chili oil
2tablespoons soy sauce
4teaspoons fresh lime juice
1tablespoonwhite sugar, or to taste
1teaspoonAsian chili garlic sauce, or to taste
Instructions:
Preheat the oven to 350°F (175°C).
Spread peanuts on a baking sheet and separate whole nuts into halves. Toast until fragrant and slightly darker, about 7 to 10 minutes, being careful not to burn them.
Take the peanuts out of the oven and allow them to cool. Transfer them to a food processor and pulse a few times until finely chopped. Add canola oil, toasted sesame oil, hot chili oil, soy sauce, lime juice, sugar, and chili garlic sauce. Process until the mixture is a slightly textured, grainy paste.
