Indulge in a flavorful and affordable vegetarian pad thai.
Ingredients:
  • 1 bunch choy sum, trimmed, leaves separated
  • 250g dried rice-stick noodles
  • 65.00 gm tomato sauce
  • 42.00 gm soy sauce
  • 18.40 gm rice bran oil
  • 350g firm tofu, cut into 1.5cm cubes
  • 1 small brown onion, halved, thinly sliced
  • 1 long red chilli, finely chopped
  • 62.50 ml fresh coriander leaves
  • Chopped roasted peanuts, to serve
Instructions:
  • Slice choy sum stems thickly and roughly chop the leaves.
  • Place the noodles in a heatproof bowl and cover them with boiling water. Allow them to stand for 10 minutes or until tender. Use a fork to separate the noodles and then drain them.
  • In a bowl, mix together tomato sauce and soy sauce. Heat a wok over medium heat, add oil, swirl to coat. Stir-fry tofu until light golden, about 5 minutes. Transfer to a plate lined with paper towel using a slotted spoon.
  • In a wok, toss in onion, capsicum, and choy sum stems. Sauté for 3 minutes until onion softens. Introduce chili and garlic, stir-fry for 30 seconds until fragrant. Now add choy sum leaves, stir-fry for 1 minute until wilted. Add noodles, tofu, and sauce mixture. Mix well until heated through. Plate the dish, garnish with coriander and peanuts, and serve with lemon wedges.
