Crispy deep-fried Filipino street food: hard-boiled eggs coated in orange batter, served with sauce.
Ingredients:
  • 12 eggs
  • oil for deep frying
  • 4 tablespoons cornstarch, plus more as needed
  • bamboo skewer
  • 0.25 cup rice vinegar
  • 0.25 cup ketchup
  • 0.25 cup brown sugar
  • 2 teaspoons soy sauce
  • 1 cup all-purpose flour
  • salt and freshly ground black pepper to taste
  • red and yellow food coloring
Instructions:
  • In a saucepan, cover eggs with water and bring to a boil. Remove from heat and let eggs sit in hot water for 15 minutes. Then, peel eggs after cooling under cold running water.
  • In a saucepan, mix rice vinegar, ketchup, brown sugar, and soy sauce. Cook over medium heat, stirring occasionally, until the sugar dissolves, approximately 5 minutes. Cool the sauce before using.
  • Create a vibrant orange batter by swirling a few drops of red and yellow food coloring into the water. Mix flour with salt and pepper in a bowl, then pour in the colorful water and stir until smooth.
  • Preheat oil in a wok until it reaches 375°F (190°C).
  • Roll eggs in delicate cornstarch and shake off any extra. Dip in vibrant orange batter for full coverage. Skewer the eggs and gently lower into the hot oil. Fry until crispy, around 2 minutes each side. Use a slotted spoon to lift and drain on paper towels.
