Quick and easy Cajun-seasoned bone-in pork chops coated in mayo and panko for a moist, juicy result when baked in the oven.
Ingredients:
  • 6 (1-inch thick) bone-in pork chops, at room temperature
  • 0.5 cup mayonnaise, or as needed
  • 1 pinch Cajun seasoning, or to taste
  • 1 (8 ounce) package panko bread crumbs
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) while you prepare a 9x13-inch baking dish by spraying it with cooking spray. Rinse your pork chops and dry them with paper towels.
  • Combine creamy mayonnaise with spicy Cajun seasoning in a bowl. Spread the bread crumbs evenly on a large plate.
  • Coat pork chops with mayo mixture, press into bread crumbs, shake off excess, and place in baking dish.
  • Roast in the oven until pork is slightly pink in the center, for approximately 35 minutes. Use an instant-read thermometer to ensure the pork reaches at least 145°F (63°C). Once done, take it out of the oven, cover with foil, and allow it to rest for 10 to 15 minutes before serving.
