Use pita bread for quick and tasty homemade pizzas.
Instructions:
  • - Preheat oven to 190°C. - In a large frying pan over medium-low heat, heat the oil. - Add the onion and cook, stirring occasionally, for 20-25 minutes until soft and golden. - Remove from heat.
  • 1. Lay out the pita bread on a baking tray. 2. Sprinkle onion over each pita. 3. Create a crisscross pattern with the anchovies on top of the onion. 4. Tuck olives and tomato halves, cut-side down, among the anchovies.
  • Place the pita bread in a preheated oven until it's crisp and golden, about 15 minutes. Take it out, sprinkle with thyme, let it cool for 5 minutes, then divide among plates and serve promptly.
