Tomato, feta and roasted capsicum fritters

Indulge in a cheesy Mediterranean snack topped with flavorful nutty pesto.
Ingredients:
  • 75g capsicum
  • 3 eggs
  • 128.75 gm milk
  • 225.00 gm self-raising flour
  • 1 large tomato, deseeded, finely chopped
  • 40.00 ml finely grated parmesan cheese or vegetarian hard cheese
  • 200g feta, crumbled
  • 57.50 gm vegetable oil
  • pesto, to serve
Instructions:
  • Combine eggs and milk in a large jug, whisking until smooth. In a separate bowl, put the flour and create a well in the center. Pour in the egg mixture and stir until a smooth batter forms. Mix in the tomato, capsicum, parmesan, and feta.
  • 1. In a large frying pan over medium-high heat, heat a tablespoon of oil. 2. Spoon a heaped tablespoon of batter into the pan and gently flatten. Repeat to make a total of 7 fritters. 3. Cook each side for 2 to 3 minutes, or until golden and fully cooked. 4. Repeat the process with the remaining oil and batter to yield a total of 20 fritters. 5. Serve the fritters with a side of pesto.
