Tomato, Rice, and Chicken Thigh Casserole

Delicious casserole with savory rice, juicy chicken thighs, and Parmesan-topped tomatoes for a comforting meal anytime.
Ingredients:
  • 8 (5 ounce) bone-in, skinless chicken thighs
  • freshly cracked black pepper to taste
  • 3 tablespoons butter, divided
  • 2 tablespoons olive oil
  • 2 tablespoons dry sherry
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 cloves garlic, thinly sliced
  • 1 cup uncooked long-grain white rice
  • 1.75 cups reduced-sodium chicken broth
  • 1 large bay leaf
  • 1 pinch saffron
  • 2 medium tomatoes, cut into 1/4-inch slices
  • 0.5 cup finely grated Parmesan cheese
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect bake.
  • Prepare the chicken thighs by trimming off any excess fat. Wash and pat them dry. Season with a moderate amount of pepper.
  • In a large Dutch oven over medium heat, melt 2 tablespoons of butter with olive oil. Sear chicken thighs until golden on both sides, about 3 to 5 minutes each. Deglaze with sherry, then transfer chicken to a plate. Keep around 2 tablespoons of drippings in the skillet after draining excess fat.
  • Sauté onion and bell pepper in a skillet over medium heat until onions are translucent and peppers have softened, around 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add rice and sauté for 2 minutes. Pour in chicken stock, bay leaf, salt, pepper, and saffron, then bring to a boil.
  • Take the mixture off the heat and arrange the chicken thighs in a single layer on top.
  • Cook in a tightly covered dish in the oven for 45 minutes at the specified temperature.
  • In a skillet, melt the last tablespoon of butter and saute the tomato slices until warmed through as the casserole finishes baking.
  • Top each chicken thigh with a slice of tomato and a generous sprinkle of Parmesan cheese. Bake uncovered until chicken juices run clear, about 15 minutes more. Use an instant-read thermometer to ensure the center reaches at least 165°F (74°C).
  • Allow the dish to sit undisturbed for a minimum of 15 minutes before enjoying.
