Ingredients:
  • 375g block puff pastry
  • 150g soft goat's cheese
  • 100g grated parmesan cheese
  • 40.00 ml chopped thyme
  • 1.5kg vine-ripened tomatoes, cored, cut into 5mm slices
  • Olive oil, to drizzle
Instructions:
  • Heat the oven to 200°C.
  • On a gently dusted surface, shape the pastry into a 30cm circle using a plate as a template. Transfer it to a baking tray lined with parchment paper and chill in the refrigerator for 15 minutes.
  • In a bowl, combine goat's cheese, parmesan, thyme, salt, and pepper. Spread the mixture on the pastry with a 1cm border. Layer tomatoes in overlapping circles from the outside in, tucking smaller end pieces under larger ones. Place one slice in the middle. Drizzle with oil, sprinkle with sugar, and season with salt and pepper. Bake at 180°C for 30 minutes, then reduce heat to 140°C and bake for 45 more minutes. Serve with green salad and garlic mayonnaise.
