Low-calorie side dish that pairs well with all meals, excluding tomato-based dishes. Optional: add diced bell peppers for extra flavor. Serve hot in a small dish.
Ingredients:
  • 2 plum tomatoes, halved and cut into 1/4 inch slices
  • 1 large zucchini, sliced
  • 3 tablespoons salsa
  • 3 tablespoons water
  • 0.5 teaspoon dried oregano
Instructions:
  • Combine tomatoes, zucchini, salsa, water, oregano, basil, salt, and pepper in a small saucepan. Add bell peppers if preferred. Bring to a boil over medium heat, then lower heat and simmer for 3 to 4 minutes, stirring often.
